Keto Albondigas

* 1 pound ground beef

  1. Combine the ground beef, parsley, cumin, smoked paprika, garlic, egg, salt and pepper in a large bowl. Mix until all ingredients are well combined.
  2. Using wet hands (or an ice cream scoop), roll the mixture into balls about 2 inches in diameter. You should have 8-10 meatballs total. Place them on a plate or baking sheet lined with parchment paper and set it aside while you make the sauce.
  3. Heat up the olive oil in a big skillet over mid level heat. Add the onion and garlic and cook it until softened, about 5 minutes.
  4. Add the passata or crushed tomatoes, chicken or vegetable broth, smoked paprika and salt and pepper to taste. Bring the sauce to a simmer, then minimize the heat to low level and let it simmer for almost 10 minutes.
  5. Carefully add the meatballs to the sauce one at a time, ensuring they are completely submerged in the sauce. Cover with a lid and allow them to simmer for 15-20 minutes or until cooked.
  6. Serve over steamed vegetables, cauliflower rice or your favorite keto-friendly side dish.
  7. Store any remaining keto albondigas in an airtight jar in your refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.

  • If you have time, allow the meatballs to sit in the refrigerator for 30 minutes before cooking. This will help them keep their shape much better as they cook.
