Chicken Salad with Cream Cheese

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup red bell pepper,finely chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Add softened creamcheese, mayonnaise, Greek yogurt, and Dijon mustard. Mix until smooth andcreamy.

  • Add shredded or diced cooked chicken breast to the bowl. Stir well to coat the chicken with the cream cheese mixture.
  • Finely chop the red onion, celery, bell pepper, and fresh parsley. Add them to the bowl and mixeverything.
  • Season the chicken salad with salt and pepper according to your taste. Adjust the seasoning asneeded.

  • Cover the bowl with plastic wrap or transfer the chicken salad to anairtight container. Place it in the refrigerator for at least 1 hour to allowthe flavors to meld.

Notes

When ready to serve, choose your preferred serving method. You can use it as a sandwich filling, scoop it onto lettuce leaves or crackers, or spread it on toasted bread.
