  • Water broth, or white wine for deglazing
  • Onions
  • Fresh garlic cloves

  • Fresh spinach
  • Heavy cream
  • Grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

Sear the Chicken

  • Begin by warming some oil in a trusty cast-iron skillet over medium heat. Once hot, introduce the chicken breasts seasoned generously with Italian seasoning, salt, and pepper. Sizzle each side until they boast a golden hue and are fully cooked through, typically around 8 minutes for each side. Once done, remove them and keep them aside for a while.

Building the Sauce

  • Dial down the heat to medium-low. Now, in comes the butter and your choice of deglazing liquid, be it water, broth, or even a splash of white wine, making sure to scrape off those delicious browned bits. As the butter melts, toss in the onions, giving them a good stir until they turn soft and translucent, which should take around 5 minutes. Following the onions, add a generous helping of garlic, letting it cook just long enough to release its aroma, typically between 30 to 60 seconds. Now, for a touch of color and texture, add diced tomatoes and fresh spinach leaves, seasoning them with salt and pepper. Stir occasionally until the spinach just begins to wilt.
