Easy Keto Chai

Ingredients

  • 1 black tea bag or 1 tablespoon of loose-leaf black tea
  • 1 cup water
  • 1/2 cup unsweetened almond milk or coconut milk
  • 1 cinnamon stick or 1/2 tsp ground cinnamon
  • 2 whole cloves or a pinch of ground cloves
  • 2 cardamom pods lightly crushed or 1/4 tsp ground cardamom
  • 1 small piece of fresh ginger thinly sliced (about 1 inch) or 1/4 tsp ground ginger
  • A pinch of ground nutmeg optional
  • 1-2 tablespoons of a keto-friendly sweetener like erythritol stevia, or monk fruit (adjust to taste)
  • A splash of vanilla extract optional

Instructions

  • In a saucepan, bring the water to a boil. Once boiling, remove from heat, add the tea bag or loose-leaf tea, and let steep for 3-5 minutes. If you're using loose-leaf tea, strain out the leaves after steeping.
  • Return the saucepan to low heat and add the cinnamon stick, cloves, cardamom pods, ginger, and nutmeg if using. Allow the mixture to simmer gently for about 5 minutes, so the spices can infuse the tea.
  • Pour in the unsweetened almond milk or coconut milk and stir. Continue to heat the mixture on low, ensuring it doesn't come to a boil (especially if using coconut milk as it can separate).
  • Add your chosen keto-friendly sweetener, starting with a smaller amount and adjusting to taste. If you're using a liquid sweetener like liquid stevia, add it drop by drop, tasting as you go to get the desired sweetness. If you'd like, add a splash of vanilla extract for extra flavor.
  • Once your chai is heated through and sweetened to your liking, strain it to remove the whole spices and ginger slices. Pour it into your favorite mug.
  • Sip your keto chai while warm and enjoy the comforting flavors without the carbs!
