Keto Baked Eggplant Parmesan Slices

This is how i make keto baked eggplant parmesan slices.

Cook Time 10 minutes

Ingredients

  • 1 large eggplant
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup almond flour
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 large egg beaten
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  • Slice the eggplant into 8 thick slices. Place these slices on the prepared baking sheet.
  • Sprinkle the eggplant slices with salt and pepper to taste. Bake them in the preheated oven for about 10 to 15 minutes or until they start to brown.
  • While the eggplant is baking, in a bowl, combine the shredded mozzarella cheese, freshly grated Parmesan cheese, almond flour, dried oregano, and dried thyme. Mix everything together well.

  • After the initial bake, flip the eggplant slices and return them to the oven. Continue baking until they become browned again.
  • Remove the eggplant slices from the oven and brush each slice with the beaten egg.
  • Sprinkle the cheese mixture evenly over the top of each eggplant slice.
  • Place the eggplant slices back in the oven and bake for an additional 10 minutes or until the cheese is melted and becomes beautifully browned.
  • Once the cheese is perfectly melted and golden, take the slices out of the oven. Serve them hot and enjoy your delicious Baked Eggplant Parmesan Slices!
