Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
Slice the eggplant into 8 thick slices. Place these slices on the prepared baking sheet.
Sprinkle the eggplant slices with salt and pepper to taste. Bake them in the preheated oven for about 10 to 15 minutes or until they start to brown.
While the eggplant is baking, in a bowl, combine the shredded mozzarella cheese, freshly grated Parmesan cheese, almond flour, dried oregano, and dried thyme. Mix everything together well.
After the initial bake, flip the eggplant slices and return them to the oven. Continue baking until they become browned again.
Remove the eggplant slices from the oven and brush each slice with the beaten egg.
Sprinkle the cheese mixture evenly over the top of each eggplant slice.
Place the eggplant slices back in the oven and bake for an additional 10 minutes or until the cheese is melted and becomes beautifully browned.
