This is how i make keto baked eggplant parmesan slices.
Prep Time 30 minutes
Cook Time 10 minutes

Ingredients

  • 1 large eggplant
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup almond flour
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 large egg beaten
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  • Slice the eggplant into 8 thick slices. Place these slices on the prepared baking sheet.
  • Sprinkle the eggplant slices with salt and pepper to taste. Bake them in the preheated oven for about 10 to 15 minutes or until they start to brown.
  • While the eggplant is baking, in a bowl, combine the shredded mozzarella cheese, freshly grated Parmesan cheese, almond flour, dried oregano, and dried thyme. Mix everything together well.
